Well thats something all Max users face with Maya. I dont actually know the solution but I guess undo is the only way. When I switched to maya I missed the modeifier stack so much that I switched back to Max in just 4 days. You'll get the hang of it in sometime.

quick mini tutorial:
1) create a box
2) polygons > smooth
3) select the box and open the channel box
4) in the channel box look at the bottom where says INPUTS,
you will have two inputs in this order
polySmoothFace1
polyCube1
5) select polySmoothFace1, new items will scroll down
there you'll find Divisions
Divisions default = 1
if you want to increase divisions put 2, 3 or more
if you want an un-smooth model, but keep smooth history put 0
in this way you can go back a forth: 0: no smooth, 1 or higher: smooth
now if you want to delete smooth node without "undo"
follow these steps:
1) select the smoothed box
2) open hypergraph ( window > hypergraph )
3) in the hypergraph window: graph > input and output connections
now you will see many boxes connected with arrows
select the polySmoothFace1 box (will turn yellow)
4) hit delete on your keyboard
hope this helps
good luck
