Use some fluid effects. I think it could work with that. Or maybe you should use some paint effects. But I don't know, how to do it exactly. Play with this things and probably you will find a way.

Sorry for the late answer. The problem is, that I have particle experience only in 3dsmax, because of my internship. In Maya I don't have any experience with those things. For a nice tutorial search via google etc. ... you will be succesful.

I'm beginning to notice, that 3dsmax is much more confortable than Maya. I don't want believe it, because I grow up with Maya into 3D ... but the near future will show, which will guide my way. When you found some fluid tutorials, please post it!! It would be interesting, how it works in Maya.

You would have to use particle instancing where you shall have to place each and every particle (brick) one by one into positions you find suitable, then zero'ing their world transformations.

A method I find useful is to have a varity of bricks shattered and instanced aswell. and also have the particles emit particles in collision.
You may come cross problems that would require you to script things out. Like if ou happen to have the brick rotated 90 degrees or so in it's initial stage (depending on the building). A method other than scripting would be to have diffrent sets of bricks prepared.. some rotated... some shattered... and etc.

This is a sort of advanced technique actually... If you are willing to pay for a video tutorial Alias has a good one out by Adrean Grahm... should be something called "Advanced Particle Instancing" from Alias Learning tools.
I have heard that Alex Alveraz (The Gnomon Workshop) has one out aswell from a dear while back in his dynamics series. I have watched most of his lessons on dynamics but not this particular one. But I have heard that Alias's lesson is a classic.

Even after you get into the tutorials of it I have to tel you that people get paid GENEROUSLY for impressive exploding building effects. Simply because it demands a very good knowledge of the software.
So it may be a little hard on ou and need you to try things out often.
Else you can always try the fully functional free demo version of BlastCode which generates complex shatter effects and explosions even with objects layered of diffrent kinds of surfaces. Just take a look at the link and view their demo. It is a powerful software from what I read.

Hope this helps.. if you want to go ahead and try things out your self; just ask your questions here. I will try keeping track.

With fluids you guys have to understand one basic thing.. you are not adding in a dynamic.. you are influencing an existing dynamic.
Try to think of it as inserting a dye with various intensities into a container. So you could get good pyrothecnics through fluid simulations... but an explosion effect to knock down bricks would be a very hardware expensive and also very costy on the rendering side.
Try to always replicate things as they are in nature it will make it easier. Like shattered trees flooding along a river is more what a something you want to simulate with a fluid effect.

I would advise you to go over and play through every preset that the MaYA fluids comes with. Examine their attributes and the emiter. MaYA fluids are as realistic as dluid dynamics can render but you really have to digest what it's all about.
If you are new to it I would say count around 5 months from now to be able to play with it very comfortably.

You can ask the questions here... My messenger crashed because I made the stupid mistake of giving it out for you guys to contact me through.
And this way many others could reach to you.
