this question has been bothering me for a while. how does using ambient, diffuse, and specular change the material? and how do you use them?

Leigh explains all of those quite well over 5 (so far) photorealistic texturing workshops on CgTalk forums.

They're very helpful, and I highly suggest reading through them.
